In Italian, 'biscotto' means biscuit. More specifically it comes from the words 'bis' and 'cotto', meaning twice baked. Following the Tuscan traditions 'wildbite' biscotti are hand rolled into logs, baked, then sliced and baked again to develop their signature crisp texture.
