‘wildbite®’ The story so far…
In 1998 a business emerged in Byron Bay that today is one of the wildest and most delicious creations in the Northern Rivers, a region that has no lack of such creations. That business is ‘wildbite’. When it comes to combining yesterday's baking methods with today’s flavours and focus on wellbeing, ‘wildbite’ arouses a profound impact on the senses: it is ‘love at first bite’.
Bakeries are synonymous with appetising fragrances and the ‘wildbite’ ovens are no exception. Within the baking heath is a larder of handmade gourmet biscotti and cookies. Here, aromas and flavours of traditional European baking combine with those of Australian wild bush foods. Tantalising aromas of sweet, exotic flavours inspire curiosity, excitement and dalliance.
‘wildbite’ was the creation of Trace Gordon and Roe Ritchie. Their expertise and high regard for organic ingredients originated from their Melbourne organic food business. Having moved north to the earthly paradise of Byron Bay, they continued sourcing fresh, natural and organic produce which they combined in traditional biscuit recipes adding their exciting new discovery - the unique flavours of Australian wild foods.
In 2005, Hans and Maria Triado became the proprietors of ‘wildbite’. Having devoted their lives to their fascination with food and the joy of eating, they continue to build on the ‘wildbite’ experience, expanding on the vision of its originators and adding to the commitment by delivering superior customer service. The Triado team has worked for more than two decades in the hospitality industry where they achieved extraordinary success managing and chefing their own restaurants in both Byron Bay and Barcelona. This, combined with their Spanish and German heritage, delivers a team steeped in traditional baking methods, imaginative culinary flair with a focus on serving unique, completely handmade gourmet cookies and biscotti. ‘wildbite’ guarantees you the freshest, most delicious and versatile products possible.
The unique ‘wildbite’ bounty of flavours includes locally sourced lemon myrtle, aniseed myrtle and kaffir lime, South Australian desert wattle seed and Tasmanian mountain pepper. These ingredients are shaped into biscotti following Tuscan traditions of double baking (to develop their signature crisp texture) or rolled into sumptuous cookies. A focus on offering healthy enjoyment (available gluten free and 96% saturated fat free) and the use of fresh organic ingredients establishes ‘wildbite’s position as the specialists in biscotti.
